chicken saldaChicken Salad Recipe – I find the red onions add the zing that makes this chicken salad recipe stand above all the others. Serve this at your next picnic or family gathering, where ever that may be.

Ingredients to make Chicken Salad Recipe

4 diced medium yukon gold pota­toes
2 hand­fuls green beans with ends trimmed
4 hand­fuls of mixed greens
few thin slices of red onion
1/4 cup olive oil
3 tbsp or more of white wine vine­gar
pinch of salt
pepper

Directions to make Chicken Salad Recipe

Step 1:

Bring the pota­toes to a gen­tle boil in salted water. They will be done when you can eas­ily run a knife through them

Step 2:

Put all the ingre­di­ents for the tomato chut­ney in a small pot and bring to gen­tle sim­mer. Cook for about 10–15 mins till the chut­ney has reduced and has started to get sweet.

Step 3:

Sea­son chicken and cook over medium high heat and put aside wrapped in foil till you’re ready to serve the salad.

Step 4:

Par-boil your green beans for 2–3 mins and add to fin­ished pota­toes. Driz­zle with olive oil add some cracked pep­per and more salt if needed.

Step 5:

Mix olive oil, vine­gar, salt and pep­per together. Put the mixed greens and red onion into a large bowl and pour on half the dress­ing and gen­tly mix with your hands.
