Ingredients to make Chicken Salad Recipe
4 diced medium yukon gold potaÂtoes
2 handÂfuls green beans with ends trimmed
4 handÂfuls of mixed greens
few thin slices of red onion
1/4 cup olive oil
3 tbsp or more of white wine vineÂgar
pinch of salt
pepper
Directions to make Chicken Salad Recipe
Bring the potaÂtoes to a genÂtle boil in salted water. They will be done when you can easÂily run a knife through them
Put all the ingreÂdiÂents for the tomato chutÂney in a small pot and bring to genÂtle simÂmer. Cook for about 10–15 mins till the chutÂney has reduced and has started to get sweet.
SeaÂson chicken and cook over medium high heat and put aside wrapped in foil till you’re ready to serve the salad.
Par-boil your green beans for 2–3 mins and add to finÂished potaÂtoes. DrizÂzle with olive oil add some cracked pepÂper and more salt if needed.
Mix olive oil, vineÂgar, salt and pepÂper together. Put the mixed greens and red onion into a large bowl and pour on half the dressÂing and genÂtly mix with your hands.
