If you have ever wondered how to make chicken salad as well as your favorite deli, try out this simple recipe:

  • Cut leftover chicken into small bite-sized pieces
  • Dice some carrots, black olives, radishes, celery, and yellow peppers into pieces smaller than your chicken. Be sure that you have at least twice the amount of chicken than diced vegetables
  • Mix a cup of mayonnaise (more if you like a wetter salad, less if you like a drier one
  • Add some seasonings to taste
  • Chill and serve with a sandwich or on a bed of cold lettuce
